As our online fans and followers already know — speaking of, be sure to follow us on Instagram, Twitter, and Facebook! — the last few months have been chock full of exciting news in food and drink with the ground floor bar and the grand reopening of our 360° Rooftop Bar, open to hotel guests and the public alike.

In early July our new restaurant opened at last! La Nuova Novella Bistrot Italiano is outdoors in summers on the lovely Piazza Santa Maria Novella. Not a bad view for enjoying your meal, is it?

Not only is the location peerless, the impressive menu designed by our chef, Tommaso Calonaci focuses on light, lip-smacking dishes to please everyone. Plus, the menu notes excellent vegetarian, gluten-free, and diet options.

Our chef combines some Italian and Tuscan “must-try” dishes with ethnic touches that will impress even the most discerning palates.

Perhaps a few examples from our menu?


To start: there is the hot&cold Caprese, plum tomato cream, basil-flavored crumble with buffalo mozzarella gelato, and panzanella with miso-marinated mackerel.


Next: the roasted potato gnocchi on cheese and pepper sauce, lemon, green apple, and fried couscous, or you can try the stracchino cheese and sausage ravioli on cream of eggplant, figs and roasted pistachios. Meat lovers: try the chicken from Vald’Arno, acidulated bell peppers, fresh cucumber,
with spicy carrot and orange blend. Fish lovers: try the codfish with cream of Florentine chickpeas, lime, and caramelized onions.


Don’t miss our desserts: strawberries, eggnog foam and caramel pastry…

Our cuisine prefers local ingredients and top-quality, seasonal foods. And, lest we forget, the wine! Our wine list has been carefully devised to truly represent the full wealth of our regional wines.

If you prefer to eat inside the hotel, we have air-conditioned indoor rooms that are quiet, ultra-comfortable, and recently renovated.

The restaurant is open daily for lunch and dinner.
